Freeze drying is a relatively modern process and is done by placing the mealworms on large racks inside a vacuum chamber before lowering the temperature to below freezing , and then slowly raising it again. The water in the food transforms from a solid state to a gas, thereby maintaining the food's structure and preserving its important nutrients intact, rather than drying and soaking into into the skin.
